Behind the cup is the renowned duo Marysabel Caballero & Moises Herrera, who have been building the reputation of the Marcala (La Paz) region as one of the most meticulously cultivated areas in Honduras for generations . Marysabel inherited the farm from her father, and together with Moises, they now manage nearly 200 hectares divided into 17 farms and one central processing station, giving them detailed control over quality from harvest to export. The culture of soil care is more than just a phrase here: they use tailor-made fertilizer mixtures, work with clay soils that are better able to cope with windy and rainy conditions , and consciously increase biodiversity – avocados, bananas, and other fruit trees grow among the coffee trees. Altitudes of around 1,550 meters above sea level give the cherries time to ripen to sweetness; careful selection and continuous work on stability make them coffees that are recognized year after year for their delicacy, purity, and consistency. There is no sensationalism here; here, honest and beautifully balanced coffee is made – and you can taste it in the cup.
The coffee is processed using the dry method. The cherries are selectively harvested when fully ripe, and after basic sorting, they are left whole and dried in the sun, with regular turning and airflow control to ensure even drying without defects. As the pulp gradually dries, it transfers sugars and fruit esters to the beans; in the filter, this translates into a dense jam-like sweetness, subtle citrus notes, and a smooth, tea-like body. Caballeros' Natural does not come across as wild – on the contrary, it is clean, sweet, and elegant, with a profile that is a joy to tune in a V60, dripper, or batch brew.
