Atlas, from the Berlin roastery The Barn, rounds out their Core Collection—a trio of coffees that showcases three different facets of specialty coffee while tracing its journey across the globe. From the Ethiopian birthplace of coffee, represented by Genesis, through the sweeter flavors of Brazil in Elemental, all the way to the volcanic soils of Central America. Atlas embodies this balance. In the cup, nougat blends with juicy, ripe plums and a subtle hint of honey, resulting in a profile that is smooth, round, and harmonious. It is a coffee designed for everyday enjoyment, yet without compromising on flavor, clarity, or character.
Atlas comes from the Finca Santa Clara farm in the Antigua region of Guatemala, where coffee trees are grown at an elevation of approximately 1,650 to 1,700 meters above sea level on the slopes of the Volcán de Agua. The farm is run by Ricardo Zelaya, the fourth generation of a family that has been growing coffee here since 1930. Volcanic soil, cooler mountain air, and high elevation create ideal conditions for the slow ripening of the coffee cherries and the development of a sweet, clean flavor profile. Additionally, approximately one-quarter of the farm consists of native forest, which helps protect local biodiversity and water sources.
This lot consists of Caturra and Bourbon varieties and has undergone washed processing. After harvest, the cherries are de-pulped, and the beans are then fermented to remove the remaining pulp. They are then thoroughly washed and transferred to African beds in covered drying areas, where they dry slowly for approximately 21 days. This meticulous process helps preserve the coffee’s purity and balance while enhancing its natural sweetness. Atlas thus concludes the Core Collection trilogy in true spirit—with a sweet and reliable cup that you can enjoy every day.
