This coffee comes from the Yaye washing station, located in the Arbegona district of central Ethiopia. The station was built in 2021 by the family-owned Testi Coffee company, headed by Faysele A. Yonis, and is one of their top operations. Only the highest quality coffee cherries are processed here, for which local farmers receive a special premium. During the harvest season, cherries are supplied by around 300 smallholders from the area around Mount Tulecha, whose farms are located between 1,995 and 2,230 meters above sea level. Thanks to the high altitude and cooler climate, the cherries ripen more slowly, which contributes to a higher bean density and a richer, more complex flavor.
This coffee is processed using natural anaerobic fermentation. In this experimental method, the coffee cherries ferment without oxygen in closed containers. The cherries are then slowly dried on raised beds. Thanks to this combination of processing methods, Ethiopia YAYE coffee retains its distinctive complexity and delicate sweetness.
