This exceptional batch comes from the West Arsi region of Ethiopia, which has only recently gained its own identity. It lies at an altitude of over 2,000 meters above sea level and is home to about 500 small growers, each cultivating hectares of land. Thanks to ideal conditions – high altitude, sunshine, and native Arabica varieties – the coffee has a wonderful complexity and purity of flavor. Each cup carries a piece of the work of these farmers, who grow coffee with enormous respect for the soil and tradition.
No expense is spared in the processing. Ripe cherries from local varieties are first sorted by hand, then de-pulped and left to ferment for 24 to 48 hours. They are then dried on raised African beds for 10 to 14 days to achieve the perfect balance of moisture and flavor. And then comes the magic – the coffee is stored in barrels that previously matured bourbon and then beer from the Funky Fluid Brewery. Over several weeks, the coffee absorbs the aroma of vanilla, oak, and bourbon, making it a truly unique experience. The result? A smooth, aromatic, and irresistibly fragrant coffee with a story as strong as its flavor.
