The cup is dominated by sweet strawberry jam, a delicate floral note reminiscent of chamomile tea, and a creamy body that lingers long after you finish drinking. The coffee comes from Ethiopia, the Guji region, and the Wachile Garse processing station, founded in 2011. The station is named after two neighboring villages, Washile and Garse, and works with approximately 110 local producers who supply freshly harvested cherries. These are grown at an altitude of around 2,060 meters above sea level, which contributes to slow ripening and a higher concentration of sugars in the fruit. The variety is Ethiopian Heirloom, a blend of local native varieties that are known for their aromatic complexity.
Processing is done using natural methods. After being sorted by hand, the ripe cherries are dried on raised African beds, where they slowly ferment in the sun. During the hottest and coldest parts of the day, they are covered to ensure a controlled and even process. It is this slow fermentation inside the cherry that is responsible for the distinctive sweetness and "jammy" character of the cup. The result is an espresso that is sweet, creamy, and pleasantly floral, with a long, smooth finish.
