The beans come from Ethiopia, specifically the Guji region, and are of the Heirloom variety, which boasts a rich and complex profile. The soil in the Guji region is rich in minerals and volcanic dust, which, together with the high-altitude climate and frequent rains, creates ideal conditions for growing coffee. The beans were prepared by the masters at the HAYB roastery, which is known for its experimental and daring philosophy. This is a coffee that is not afraid to be different. This coffee received a cupping score of 87, which means it is truly exceptional.
The coffee was processed in an unconventional way, combining natural and barrel-aged methods. After harvesting, the coffee cherries are spread out on concrete patios or African beds, where they are dried in the sun for several days and turned regularly.
