Fragrant spring days are coming, and with them comes the fragrant coffee from the Polish roastery HAYB. These limited edition beans will enchant you. Each sip is like breakfast on a sunny morning with a bowl of ripe apricots, crispy toast with strawberry jam, and peace of mind. After the fruity taste of apricots and strawberries, a touch of caramel awaits you in your cup, complemented by a hint of whiskey, which gives the coffee a slightly warming finish.

The beans come from Ethiopia, specifically the Guji region, and are of the Heirloom variety, which boasts a rich and complex profile. The soil in the Guji region is rich in minerals and volcanic dust, which, together with the high-altitude climate and frequent rains, creates ideal conditions for growing coffee. The beans were prepared by the masters at the HAYB roastery, which is known for its experimental and daring philosophy. This is a coffee that is not afraid to be different. This coffee received a cupping score of 87, which means it is truly exceptional.

The coffee was processed in an unconventional way, combining natural and barrel-aged methods. After harvesting, the coffee cherries are spread out on concrete patios or African beds, where they are dried in the sun for several days and turned regularly. Drying gives the beans intense fruity notes and rich sweetness. The beans are then stored in wooden barrels, where they acquire subtle hints of whiskey and intensify their depth of flavor. This unique processing method has given the coffee an unmistakable character that will enchant you with its richness.
