Respekt Coffee Roastery is introducing a new coffee from Ethiopia. The coffee is pleasantly sweet, intensely fruity, and has a beautiful floral aroma. On the palate, you’ll taste sweet strawberries and peaches, which give it its fruitiness, all underscored by the delicate sweetness of wildflower honey, resulting in a full-bodied and juicy aftertaste.
The beans come from the Guji region in Ethiopia. This region is renowned for its coffee and ranks among the best and most popular in the world. Coffee trees here grow at an elevation of 1,850 to 2,100 meters. The combination of higher altitude and volcanic soil provides the coffee with the ideal conditions for slower, thorough ripening. This, in turn, lends the flavor a distinctive aroma and complexity. The lot is processed at the Hadeso station in the Shakisso region, which sources beans from approximately 500 smallholder farmers. The beans come from a blend of JARC varieties bred in Ethiopia. The JARC varieties were developed through the selection of native Ethiopian coffee trees and are prized for their hardiness, good yield, and often their clean, floral-fruity character in the cup. Ethiopia is truly renowned for its coffee, and for good reason. This very coffee beautifully demonstrates that with its uniqueness.
After harvest, the coffee cherries are carefully sorted, and the perfectly ripe ones are processed using the natural method. This means they are dried whole—including the pulp—on raised African drying beds; after drying, the pulp is removed, leaving only the coffee beans. Natural processing is characterized by an intensely fruity flavor with a pleasant sweetness and aroma. Thanks to careful sorting, this lot boasts a Grade 1 classification, which is the highest possible quality grade in Ethiopia.
