This coffee comes from small farmers who grow Heirloom varieties in the Gingo Bedesa area of Guji. At an altitude of 2, 268 meters above sea level, the coffee trees grow in the shade of Enset, Shenkora and Birbira trees and benefit from the rich soil and specific microclimate of the "blessed" Buku Sayisa valley . The terrain is so challenging that farmers transport their coffee cherries to processing stations on horseback. Thanks to the high altitude, the cherries ripen more slowly and become denser. Sayisa NAX is processed using the natural method – freshly picked, perfectly ripe cherries are dried whole on raised African beds in direct sunlight for approximately two to three weeks.
