As soon as Vnitroblock appeared in Prague's Holešovice district, it didn't take long for its founders to set up theNot Another Boring Roastery. It offers thisanaerobically processedEthiopian coffee, which, thanks to its fruitiness, can be a pleasant change after the winter holiday season. Its profile offers sweetlychee, distinctiveblack teawith lemon, all underscored by a floral aroma. 

The coffee cherries themselves come from the famous Yirgacheffe region in southern Ethiopia. Coffee trees grow here at altitudes of around 2,000 meters above sea level, where they have ideal humidity and shade for growth and flavor development. The cherries are processed by the localNegele Gorbitu cooperation station, which takes them from local farmers who, often with their families, care for them and pick them by hand. Several varieties are grown in the area, but for this coffee, it isKurume, Dega, andWalisho, which are known for their floral tones. 

The coffee is processed using theanaerobic natural method. The cherries first undergo a careful sorting process and are then placed in closed containers for up to 72 hours, where controlled anaerobic fermentation takes place without oxygen. During this process, complex flavor compounds develop, giving the coffee a distinctive depth, juiciness, and a delicate, natural sweetness. After fermentation, the cherries are spread in a thin layer on African beds, which allow for even airflow from above and below. This allows for slow and controlled drying, during which the cherries are regularly turned and protected from direct sunlight and moisture. The result is a playful coffee with a distinctive flavor profile.
