Mr. Christmas from the British roaster Ride & Grind. The first sip of this light roast coffee will transport you to a world of delicate fruit explosions—juicy blackberry notes appear in the cup, followed by subtle peach nuances reminiscent of summer fruits in the sun, and playful accents reminiscent ofSkittlescandy. This is followed by a floral undertone and a hint of cherry, which adds airiness and elegance to the whole. A pleasant sweetness, light acidity, and medium body combine to create a coffee that is an experience for the taste buds and for those moments when you want something beyond your usual morning cup.
This exceptional coffee comes from the Guji Megadu region of Ethiopia, from a farm run by Bette Buna. Guji is known for its extremely red coffee cherries and its origin, which blends traditional cultivars such as 74112, 74110 and wild varieties ("Wild Guji"). The farm faced a labor shortage this year, which led to careful selection of the remaining harvested fruits, further enhancing the character of this cup.
In terms of processing, the coffee was processed using the naturalmethod (drying with cherry pulp). However, before drying, a technique referred to by the team at Bette Buna as"kickstart"was applied. The fruits were briefly exposed to an anaerobic environment, which stimulated a change in the sugar structure before standard fermentation drying began. The cherries were then dried on raised "African" beds, stored for at least 8 weeks to develop complexity and intensity of flavor, and then underwent a further stage of sorting and cleaning.
