The coffee comes from the Guji region, specifically from the high-altitude village of Haro Wachu in the Uraga district. Local smallholder farmers grow coffee in small gardens at elevations of up to 2,250 meters above sea level, often in the shade of native trees such as Cordia africana or acacia. Thanks to the cooler climate, the coffee cherries ripen slowly here, which positively contributes to their sweetness and complexity. In recent years, the Guji region has been one of the most prominent producers of specialty coffee in Ethiopia and regularly yields exceptional lots.
Processing is done using the anaerobic natural method, which shifts the flavor profile to more pronounced and experimental levels. After hand-picking, the cherries are sorted and then fermented in sealed containers without oxygen for several days. This process highlights the fruitiness and adds depth and intensity to the coffee. The subsequent sun-drying takes approximately two weeks, during which the flavors stabilize and concentrate. The result is a bold, juicy, and aromatically rich coffee that will be especially appreciated by lovers of modern, funky filter brews.
