Ethiopia Gedeb from Beansmith.s is a wonderfully complex coffee that will captivate you with its fruity sweetness and delicate acidity. Notes of wild strawberries, plums, and exotic yuzu gradually emerge in the cup, complemented by a light tea note that adds depth and elegance. Each sip is fresh yet harmonious, maintaining a pleasant balance between fruitiness, sweetness, and light texture. This lot is the ideal choice for all methods of filter coffee preparation, whether V60, Chemex, or Aeropress, where the subtle nuances come through perfectly.
The coffee comes from the Chelbesa station in the Gedeb area, part of the famous Yirgacheffe region. This area is renowned for its high altitude between 1900 and 2200 m, ideal for growing high-quality Ethiopian coffee. Farmers here work on small plots, often less than 5 hectares, and preserve traditional methods of cultivation in the shade of trees and with minimal use of chemicals. In Chelbesa, coffee is produced under the supervision of experienced workers and families who carefully select and harvest the cherries. The new SNAP Specialty Coffee processing station, equipped with ceramic fermentation tanks, ensures clean processing and promotes optimal fermentation so that each lot brings out the best in the unique Ethiopian Heirloom varieties 74158 and 74112.
Processing is carried out using the classic washed method with controlled fermentation. After sorting and flotation, the cherries are stripped of their skins and mucilage, which "ferments" in tanks for 2-3 days. This is followed by 12 hours of soaking and drying on raised beds for 7-10 days. Finally, the beans are sorted by hand and packed in a warehouse for final processing. The result is a filter that enchants with fruity and citrus notes, the sweetness of plums and wild strawberries, and a delicate hint of green tea, reminiscent of its complex origins and the meticulous care of the farmers of Chelbesa.
