This coffee is sourced by Fahem General Trading PLC , led by Mr. Mohammed Lal. The company has built a processing station in the Checka area and works with more than 750 small farmers associated with the Atnago group . The coffee trees grow at an altitude of 1,755–2,010 meters above sea level in the shade of native trees and are cultivated mainly organically, with up to 90% of the fertilizer coming from organic sources. The region is characterized by a stable climate and a diverse ecosystem that promotes slower ripening of coffee cherries. Careful hand-picking of only ripe cherries and an emphasis on quality result in a coffee that combines tradition and precision processing.
Processing is carried out using the washed method. After the cherries are hand-picked, they are pulped, fermented, thoroughly washed, and then dried on African beds in direct sunlight. After drying, the coffee is stored directly on the farm and then transported to the main processing plant in Addis Ababa, where it is hulled, sorted, and prepared for export. This traditional washed process preserves the purity of flavor and allows the citrus acidity, delicate sweetness, and elegant tea character so typical of Ethiopian coffees to shine through.
