The first sip of this beauty will transport you to the sweetness of black cherries accompanied by fresh notes of strawberries. The whole cup is then finished off with the sweet and sour aftertaste of exotic tamarind. Sweet, fruity, distinctive. Just as Ethiopian coffee should be.
This coffee comes from the Dambi Uddo area in the Shakisso region of southern Ethiopia . This area is known for its ideal conditions for growing coffee – high altitude, rich volcanic soil, and a stable microclimate. Thanks to these conditions, the coffee cherries develop a complex and unique flavor profile. The Bookissa farm grows traditional Ethiopian varieties known as "Ethiopian Landrace," which are prized for their genetic diversity. Coffee from this area is often very fruity and aromatic, which is confirmed by this particular harvest from January 2024. Bookisa, led by farmer Ture Wajim, also focuses on working with small farmers, providing them with support in processing, education, and infrastructure, thereby contributing to sustainable development and ensuring high-quality coffee production.
The coffee owes its sweetness and full fruity body to natural processing. After harvesting, the ripe cherries are carefully sorted and then dried whole on raised African beds or concrete slabs. This processing method gives the coffee rich fruity notes, sweetness, and lively acidity.
