This coffee comes from the Los Pirineos farm, located on the summit of the Tecapa volcano in the Usulután region of El Salvador. The farm, owned by Gilberto Baraona, spans over 150 hectares and sits at an altitude of 1100–1400 meters above sea level. It is known for growing over 80 different coffee varieties under the partial shade of native trees. Gilberto Baraon was a very successful farmer and before his passing, he managed to secure multiple placements in the top 10 at the El Salvador Cup of Excellence competition. Today, his son Diego Baraon continues to successfully run the farm and produce high-quality coffee.

This particular batch is from the Pacamara variety and has been processed using the honey method. This process involves removing the skin of the coffee cherries while leaving some of the pulp on the beans during drying. The result is a sweeter and more complex flavor profile that highlights the natural fruity notes of the coffee.
