LOS PIRINEOS is a sweet and velvety smooth coffee with lower acidity, perfect for lovers of harmonious flavors. In the cup, you'll find notes of dark chocolate, hazelnuts, and dried fruit, creating a rich and balanced taste profile. This Bourbon Elite variety, grown on one of El Salvador’s most renowned farms, brings intensity reminiscent of classic Brazilian Bourbons but with an even more concentrated aroma and deeper sweetness. Thanks to meticulous cultivation and precise washed processing, this exceptional coffee beautifully blends tradition with innovation.

The Los Pirineos farm, managed by Diego Baraona, takes its name from the Pyrenees mountains and is located in the Tecapa-Chinameca region of Usulután. The Baraona family has been cultivating coffee here for over a century, gaining international acclaim through their expertise and continuous improvement in coffee production. Diego took over the farm from his father, Gilberto Baraona, who carefully selected the Bourbon Elite variety from original Bourbon trees planted in El Salvador many years ago. Today, Diego focuses not only on preserving this unique variety but also on cultivating other rare varieties such as Pacamara, Sudan Rume, and additional exotic cultivars.

This coffee is processed using the washed method, highlighting its clean and balanced character. Handpicked cherries are meticulously sorted, ensuring that only perfectly ripe cherries proceed to the next stage. After pulping, they undergo overnight dry fermentation to enhance their complex flavors. The following morning, any remaining pulp is thoroughly washed away, and the beans are slowly dried on raised beds, regularly turned throughout the day to ensure even drying. Protective screens provide optimal conditions, preventing unwanted moisture from affecting quality. Once ideal moisture levels are achieved, beans are stored in hermetically sealed GrainPro bags to preserve their unique freshness until they reach specialty coffee lovers worldwide.

You won't find any hints of dark chocolate or nuts here—the flavor profile described is completely off the mark for me (but who am I to argue with Tim Wendelboe?).
