The Finca Plan del Hoyo farm, where this coffee comes from, lies at an altitude of 1,760 meters above sea level, inside an old crater on the northern slope of the Santa Ana mountain range in El Salvador. The crater, filled with fertile volcanic soil, is sheltered from the wind by trees, providing coffee trees with absolutely ideal growing conditions. Farmer Francisco R.R. de Sola began growing them here in 2015, and he selected the varieties so well that his 14-hectare farm has since placed in the 2023 Cup of Excellence. However, this achievement is primarily due to the tremendous care of everyone who tends the coffee trees. Their farm also features a research variety garden, which they manage in collaboration with the Borlaug Institute at the University of Texas.

SL28 is a variety native to Kenya, genetically related to the Bourbon group, and a true rarity in El Salvador. It is characterized by exceptional body and cup quality. But before you can enjoy it, farmers must first hand-pick the best cherries and process them usingthe traditionalwashed method. After harvesting, the cherries are pulped, the beans ferment in water, and after washing, they are transferred to raised African beds where they are sun-dried. It is precisely the washed method that accounts for the cup’s clarity, allowing orange and apricot notes to shine beautifully. So, will you give it a try?
