El Salvador Ataco from Wave Coffee Roasters is a juicy and sweet lot that combines fruity vibrancy with a pleasant chocolate depth. In the cup , notes of orange curd, cranberry, chocolate, and roasted almonds come together to create a balanced and slightly playful profile. The coffee has a medium body, pleasant sweetness, and a livelier acidity that adds energy to the cup without being overpowering. This makes it work exceptionally well in a filter, where its fruity-chocolate combination really shines.

The coffee comes from the Apaneca region in El Salvador, where coffee trees grow at an altitude of 1,200–1,300 meters above sea level. This area is known for its stable climate and ideal conditions for growing specialty coffee. Farmers working with the Anacafe, Bourbon, and Catuai varieties contribute to the production, collectively creating a balanced and complex flavor profile. The resulting lot achieves a cupping score of 87.5 points, confirming its high quality and the meticulous approach to processing.

Processing using the Natural Anaerobic method gives this coffee its distinctive character. Fully ripe cherries are first selectively hand-picked and then fermented whole in a sealed environment without oxygen, which helps develop sweetness and fruity intensity. They are then dried whole, with both the skin and pulp intact, which promotes a fuller body and more pronounced aromatics. This approach results in a cup that combines pronounced juicy fruitiness with chocolatey sweetness and a subtle nutty finish.
