After being harvested by hand, the cherries undergo thorough washing and flotation selection, which ensures that only perfectly ripe fruits go on to further processing. This is followed by 24 hours of whole fermentation, then hulling and 48 hours of anaerobic fermentation in a closed, oxygen-free environment, which enhances the sweetness and fruity depth of the coffee. After washing and thorough draining, the coffee is dried in a greenhouse, where the temperature and humidity are controlled to preserve all the subtle flavor nuances.
