The coffee comes from the Tamana farm in the El Pital region of Huila, run by experienced producer Elias Roa Parra. The Huila region is known for its ideal climatic conditions and rich volcanic soil, which allows even less common varieties such as Papayo to thrive here . Papayo is a rare mutation known for its floral notes, delicate texture, and elegance in the cup. Elias Roa is also a farmer who is not afraid of innovation – he combines traditional approaches with new methods and has been working for many years to improve the quality and sustainability of his production.
Processing is carried out using the classic washed method, which beautifully highlights the purity and delicacy of this exceptional variety. The cherries are carefully sorted by hand, fermented in water tanks and then dried on raised beds so that the coffee retains maximum sweetness and fruitiness. The result is a cup with floral aromas, delicate acidity, and an aftertaste reminiscent of slightly sweet oolong tea.
