What's more, this coffee has a beautiful story behind it – it is the very first decaf from a female producer that the roastery has roasted, and at the same time a great example of how decaf can taste fresh, fun and full-bodied.
The coffee beans come from the La Leona farm in Quindío, Colombia, run by Luz Helena Salazar – an experienced farmer, mother of the founders of Cofinet and wife of legendary producer Jair Arcila. Her journey to coffee began thanks to her family, but today she is the one who is taking Cofinet's quality to the next level. She grows select varieties on 8 hectares of land, carefully supervises the harvest and processing, and is also involved in sustainable initiatives such as tree planting, water conservation, and farmer education. The beans from La Leona are then processed at the nearby La Pradera station, which guarantees maximum freshness and control.
The process? Fermentation with fruit, which lasts 72 hours without air access and with the addition of tropical fruit, beautifully brings out the sweetness and fruity notes. After de-pulping, the beans are dried under controlled conditions and finally decaffeinated in Colombia using the gentle Sugar Cane method – with natural ethyl acetate from sugar cane. This process preserves the full flavor and sweetness without any unwanted notes. The result is a coffee that tastes like a vacation.
