Silvia and Guillermo Rojas farm on the four-hectare El Sismo farm in the Huila region of Colombia, which is renowned for its ideal climate and rich soil. Exotic fruit trees grow among the coffee trees here, creating a natural microclimate and giving the coffee cherries a unique character. Silvia started growing the Pacamara variety as an experiment. She obtained the seeds from her brother-in-law and planted them at the highest point of her farm, at an altitude of 1,650 meters. The processing of this coffee reflects precision and attention to detail. After being harvested by hand, the cherries are left to oxidize for 36 hours, then de-pulped and fermented for another 36 hours in closed bags.
