Behind this exceptional coffee is Jairo Arcila, a third-generation farmer from the Armenian Quindío region of Colombia, an area that is literally the heart of Colombia's specialty coffee production. His Santa Monica farm is located at an altitude of 1,500 meters, where ideal climatic conditions give rise to coffees with a distinctive flavor profile. Jairo and his family are no strangers to experimental processing – his sons Carlos and Felipe run the export company Cofinet and together they are among the most progressive producers in the country. This Pink Bourbon coffee has undergone "experimental honey" processing, a method that combines precision craftsmanship with playful creativity. After harvesting, the coffee cherries were anaerobically fermented for 72 hours with wine yeast and added lychee fruit. It is the lychee – a small but aromatic fruit – that gives the coffee its unmistakable tropical aroma and flavor profile reminiscent of a combination of pineapple, mango, lime, and mandarin. Because all the sugar is left on the beans during fermentation, the coffee has a full body and juicy sweetness. The subsequent drying takes place on raised African beds, which ensure even drying and preserve all the flavor nuances.
