These plum jam beans are truly unique, not only because of their distinctive flavor, but also because they are an exceptional decaffeinated coffee roasted by masters of decaffeination who have dedicated their lives to this craft—the D stands for decaf roastery in Vienna. An espresso made from this coffee will remind you of your grandmother's plum jam with notes of apples from her garden and a sweet caramel body.

This selection comes from El Vergel Estate in the coffee-famous Tolima region of Colombia and is grown and processed under the guidance of brothers Elias and Shady Bayter. Originally focused on avocado cultivation, the farm decided to experiment with coffee in 2006 when avocado prices fell. This bold move led to the farm's transformation into a center for specialty coffee cultivation. Today, El Vergel is recognized as an innovative leader in Colombian coffee production, combining traditional methods with modern technologies.

The coffee is processed using the washed method, which means that the cherries are first peeled and then fermented in tanks with water. This process gives the coffee a clean acidity and elegant lightness with complex aromas. The coffee is then decaffeinated using the Sugar Cane method, which uses ethyl acetate obtained from sugar cane. This process not only gently removes up to 99.9% of the caffeine, but also preserves the natural flavors of the coffee, often with higher sweetness and no unwanted flavors.
