Piña Colada from Slovakia’s LOT Roastery is a Colombian co-fermented coffee that truly lives up to its name. In the cup, expect notes of pineapple, orange, and vanilla—a sweet, juicy, and exotic profile reminiscent of a summer drink. Thanks to co-fermentation with pineapple, coconut, and vanilla, the coffee has a distinctive aroma, fruity sweetness, and a delicately creamy mouthfeel without feeling heavy.

The coffee comes from Colombia, specifically the Quindío region near the city of Armenia. It was grown on the Finca La Sirena farm at an elevation of 1,420 meters above sea level, where fertile soil, meticulous care of the plants, and ideal conditions allow for the creation of high-quality micro-lots. Behind the farm is Juan David, who in 2021 developed his own processing method focused on the stability and clarity of the final cup. It was this approach that led to the creation of the Sens Coffee brand, under which he collaborates with partners around the world. With Piña Colada, it’s clear that the goal was not just a distinctive flavor, but also a clean, controlled, and harmonious result.

The variety is Castillo, and the processing method is truly unconventional: washed fruits co-fermented osmotic dehydration. In practice, this involves washed, co-fermented coffee that is processed alongside fruit and other ingredients—specifically pineapple, coconut, and vanilla—during the process. Osmotic dehydration helps to manage the intensity of flavors and aromas so that the coffee acquires an exotic, sweet, and clean character. The subsequent gentle drying helps preserve the aroma, color, and individual flavor layers. The result is a cup that combines tropical fruitiness, vanilla sweetness, and a subtle, playful cocktail-like quality, all while maintaining a pleasant clarity and balance.
