In the cup, you will find notes of sweet lollipop, banana ice cream with chocolate, and dense brownie, complemented by a pleasant citrus acidity. The result is a juicy, rich, and creamy sweet filter coffee with a distinctive dessert character typical of modern processed Colombian naturals.
The coffee comes from the Huila region, from the Acevedo area, where the Peñas Blancas Coffee Processing Center operates. This station functions as a centralized processing center for small farmers in the area and also as a community project aimed at improving quality and stabilizing producers' incomes. The project is led by Nestor Lasso and Jhoan Vergara, who are known for their emphasis on controlled fermentation and working with micro-lots. The station provides farmers with infrastructure, technical support, and education in post-harvest processes.
The variety of this lot is Castillo and is processed using the natural anaerobic method . After selective hand harvesting and sorting, anaerobic pre-fermentation takes place for 48-72 hours in closed tanks without oxygen access. The whole cherries are then dried for 25-30 days on raised beds with regular turning and moisture control. After drying, the coffee stabilizes in parchment and then undergoes dry milling. The result is a sweet, structured, and aromatically distinctive cup with a long finish.
