Merrybeans' Christmas Colombia is a sweet and spicy coffee that perfectly captures the festive atmosphere. Notes of punch cake, delicate cinnamon, and cream unfold in the cup, creating a harmonious and warming taste experience. This micro-lot is primarily intended for filter preparation, where its layered character and sweetness come through beautifully. The coffee comes from the Nogales farm in the Bruselas region of Colombia, run by the charismatic Oscar Hernández. He is continuing the legacy of his father, winner of the 2006 Cup of Excellence, and taking local coffee a step further. The farm works with both traditional and exotic Arabica varieties, combining years of experience with modern methods and a careful approach to the soil. Micro-lots from Nogales have their own "recipes" and processes that ensure maximum quality and a distinctive flavor in every cup.
The Orange Castillo variety was processed according to one of the farm's most advanced protocols. Ripe cherries undergo selective harvesting and careful sorting in water, then they are cleaned and subjected to heat shock at 90°C, which releases more sugars for more intense fermentation. This is followed by 15 days of drying in the sun and another 15 days of aging in whiskey barrels, which give the coffee subtle spicy notes. The result is a juicy, distinctive, and beautifully layered coffee that brings the true Christmas spirit to your cup.
