The Liberec roastery Jedno Kafe is coming out with its winter limited edition! It combined coffee beans from four farms in the Tolima region of Colombia to create this limited winter edition. They named the coffee after the Nevado del Tolima mountain range, under whose snow-capped peaks the farms are located. From your cup, you will smell juicy apricots, dried oranges, and Christmas gingerbread. Enjoy it either as a juicy filter coffee with a long sweet aftertaste or as a fruitier espresso that will warm you up on long winter evenings.
This limited winter edition is a blend of traditional Colombia, Castillo, and Caturra varieties, which complement each other with their sweetness, juiciness, and complexity. It is the result of collaboration, trust, and passion that comes through in every sip. The farmers behind this coffee are Julio Horta, Manuel Dagua, Fernando Paya, and Uber Quintero, some of whom come from the indigenous Nasa Wesh community. With their cultivation skills, they bring the best of the Colombian mountains to the world. With respect for nature and honest work under the shade of native trees. The coffee was created in collaboration with producers who, thanks to the Incorporate project, receive fair prices, education, and international recognition.
Colombia NEVADO is processed using the dry (natural) method. Farmers hand-pick ripe cherries and transport them for fermentation and drying on the day of harvest. The coffee is then processed in whole cherries. First, the cherries undergo controlled fermentation for 48 to 72 hours, and then they are dried on African beds at a controlled temperature and with natural airflow.
