Behind this exceptional coffee are brothers Nestor and Adrian Lasso, who took over the family farm El Diviso in the Huila region of Colombia, in the Pitalito area, at an altitude of approximately 1,750–1,850 meters above sea level. They are the third generation of farmers and, since taking over the farm, have focused on micro-lot production and innovative processing methods that deliver amazing results. Together with their colleague Jhoan Vergara, they are pushing the boundaries of traditional coffee cultivation towards exceptional quality and experimental practices that have found their place on the world barista scene. Their commitment to quality, sustainability, and organic farming has earned them international recognition and success in coffee competitions around the world.
The coffee was processed using the anaerobic natural fermentation method. The cherries were carefully sorted and then sealed in airtight plastic tanks, where controlled fermentation took place. This process significantly enhances the natural sweetness and rich body of the coffee. After fermentation, the beans were dried in the sun in whole fruits, which gave them their typical complexity and intense fruity notes.
