This Caturra microlot, grown by approximately 200 small-scale farmers from an indigenous reservation in the rural Aponte region of the Nariño department, was produced as part of Cofinet’s Regional Plus program. These growers, who have been pioneers of the honey process in Colombia since 2017, take full advantage of the local volcanic ash soil, consistently low temperatures (11–25 °C), and relative humidity. These conditions allow the coffee cherries to dry slowly and develop a complex flavor profile. The Caturra variety, which originated as a natural mutation of the Red Bourbon variety in the Brazilian state of Minas Gerais, is popular for its higher yields and disease resistance. In the cup, it scores 86+ points and is characterized by lively notes of caramelized dried fruit, yellow fruit, cardamom, panela, and fresh citrus acidity.
The coffee is processed using the honey method, which is essential for achieving its unique profile. This process begins with the hand-picking of the best ripe coffee cherries, which are then de-pulped, though a portion of the sweet mucilage remains on them. The cherries are then spread out on drying beds, where they slowly dry under the African sun.
