This coffee comes from a women's cooperative in the Huila region of Colombia. A group of 51 women are dedicated to organic coffee farming and promoting equality. The Caturra variety used, a mutation of Bourbon, is known for its sweetness, delicate acidity, and balanced body.
Maria coffee undergoes a washed processing method. This is one of the most common ways of processing coffee – and also the one that best brings out the purity, clarity, and acidity of the flavor. This method emphasizes removing the pulp from the coffee cherry immediately after harvesting. First, the beans are mechanically stripped of their husks and most of the pulp in a hulling machine. They are then left to ferment in water tanks for several hours to days – during fermentation, the slimy layer surrounding the parchment bean breaks down. After fermentation, the beans are thoroughly washed with clean water and then dried – either on African beds, concrete surfaces, or mechanically in dryers. The entire process requires a large amount of water, but at the same time allows for very precise quality control. The result is a clean-tasting, structured coffee, often with higher acidity, an elegant body, and a distinctive fruity or floral profile.
