Delicate yet lively. Low Caf Colombia LOS NOGALES from French roaster Tanat Coffee proves that coffee with lower caffeine content does not have to be a compromise. The cup reveals lemon freshness, bergamot sparkle, and juicy strawberry notes, held together by a clean and light structure. The higher acidity is clear and precise, the body delicate and elegant. Light filter roasting brings out the details and emphasizes the fruity character, making this Colombian coffee surprisingly expressive and layered.
The coffee comes from the Los Nogales farm in Pitalito, Huila region, founded eighty years ago by Ricardo Hernández and Concepción Castillo. Ricaurte Hernández, winner of the 2005 Colombian Cup of Excellence, was a prominent figure who elevated the farm to the ranks of respected producers. After his tragic death, his son Oscar Fernando Hernández took over the management, combining quality, sustainability, and innovation. Today, Los Nogales is the Hernández family's modern production center and a symbol of their long-term work with the terroir.
The Typica variety lot is processed using the washed method and then gently decaffeinated using the EA process with a natural solvent obtained from coffee pulp. The beans are first soaked in hot water to open their structure, then they go through several baths that remove approximately 95% of the caffeine while preserving the aroma. This is followed by a controlled 96-hour fermentation at 18°C using a culture from previous lots, which adds depth and complexity to the cup.
