Beansmith.s roastery presents La Victoria coffee, which is beautifully clean and full-bodied. It has already enjoyed great popularity as an espresso, but this time we have roasted it specifically for your filter. Each cup has a richly fruity body with a distinctly sweet aftertaste. It is dominated mainly by cherries, candied apples, and finally a hint of caramel. If you like sweeter, syrupy tones, this coffee is just for you.
This coffee comes from the foothills of the Nevado del Huila volcano and is grown, harvested, and processed in La Victoria, where high-quality coffee has been produced for several generations. This coffee contains three varieties: Bourbon, Caturra, and Typica. Bourbon is highly prized for its excellent cup quality and low production. It originates from Yemen and spread to Latin America, where it became the basis for other varieties. Caturra is characterized by its smaller plant size and more compact growth, which allows for denser planting. Typica, originally from Ethiopia, is known for its excellent cup quality.
This coffee is fully washed, which means that after harvesting, the beans undergo a careful and thorough process that ensures purity and balance of flavor. After hand-picking, only ripe coffee cherries are selected, which are then carefully sorted using water to remove any unripe, damaged, or defective fruits.
The cherries are then hulled and immersed in water, where they ferment for 24 hours. The beans are then thoroughly washed to ensure their purity and spread out on concrete surfaces, where they are dried under constant supervision for approximately 20 days.
