Behind this coffee is Edinson Argote. He is a farmer who worked his way up from scratch. From childhood, he worked on other people's farms, later joined the army, and eventually worked his way up through sensory courses and work on progressive coffee projects to his own farm, Quebraditas, in the Huila region. Today, he grows both traditional and the most exotic varieties on 18 hectares at an altitude of 1,600–1,850 meters above sea level. Together with his family, he focuses on sustainable agriculture, working with the soil, and long-term relationships with partners who share their passion for quality and innovation.
This Colombian coffee has undergone very precise processing, resulting in a deep and original flavor profile. After careful hand picking, the whole cherries were fermented for 72 hours, followed by rehydration in hot water and then 144 hours of fermentation at a controlled temperature below 25 °C. Fermentation was supported by specific yeasts created by macerating the pulp of Gesha, Sidra, and Pink Bourbon varieties. Fermentation was followed by 72 hours of drying in controlled temperature stages and stabilization in GrainPro bags. The result is a coffee with layered sweetness and floral and fruity characteristics.
