The La Pirague family farm in the Huila regionof Colombia is run by Arley Vargas and his father Alexander – a duo united by a deep passion for specialty coffee and respect for nature. Coffee cultivation and processing here are based on a sensitive approach with an emphasis on sustainability, regenerative agriculture, and precise processing. The Pink Bourbon variety, from which this lot originates, is considered one of the most interesting in Colombia – it combines floral delicacy, juicy acidity, and elegant sweetness with a long finish. The high altitude of around 1,800 meters above sea level provides coffee trees with ideal conditions for slow ripening and the development of a rich flavor profile.
The processing combinesdouble fermentation –72 hours of oxidative fermentation followed by 98 hours of anaerobic fermentation in closed barrels with a degassing valve. The coffee is then aged and slowly dried for up to 20 days in shaded drying rooms, ensuring consistent quality and a balanced profile.
