Grapefruit, elderflower, and raw honey come together in this coffee to create a clean, floral, and elegant cup. The flavor is delicate, fresh, and very precise, with a honey-like acidity and a sweet finish that beautifully ties the entire profile together. According to Onyx Coffee Lab, it shines best on a filter, where its citrus notes, light floral character, and crystalline sweetness come fully to the fore. It is a coffee that doesn’t feel heavy or overly bold, but rather clean, bright, and very smooth.
Behind this coffee is producer Yulieth Mora and a collaboration with Equation Coffee in Colombia. Onyx describes it as a beautiful example of what they love about Colombian coffees. Colombia has a long coffee history dating back to the early 19th century and to this day relies primarily on the work of small farmers. At the same time, it is known for its diversity, openness to innovation, and a wide range of varieties and processing methods. According to Onyx, the Pink Bourbon variety itself originated in the Huila region and is now viewed more as part of the broader Ethiopia Landrace family than as a classic Bourbon. It is sought after mainly for its complex acidity, delicate floral notes, and elegant flavor profile.
The processing is washed, and the coffee is subsequently dried on raised beds. After harvest, the cherries are sent to a wet mill, where sorting, hulling, fermentation, and washing take place. The goal is to ensure no fruit pulp remains on the bean, leaving only a thin layer of parchment to protect it. After fermentation in water tanks, the beans are thoroughly rinsed and spread out on perforated surfaces, where they slowly dry in the sun thanks to air circulation. The result is a clean, aromatic profile that beautifully highlights the character of the Pink Bourbon variety.
