The Colombia Javier Cantillo Geisha from the Canadian roaster September Coffee demonstrates why the Geisha variety is so highly prized among specialty coffee lovers. Even the aroma after grinding is incredibly clean and elegant; in the cup, it then reveals a juicy acidity reminiscent of ripe, juicy pears and the citrus freshness of lime. The entire profile is complemented by delicate floral notes of jasmine, a light body, and a silky texture that lingers long after the last sip. This is not a coffee built on density or heavy sweetness; on the contrary, it works with precision, purity, and complexity. The extra light roast allows the terroir and the character of the Geisha itself to shine through to the fullest, so that every sip feels lively, sparkling, and exceptionally transparent.

Behind this coffee is producer Javier Cantillo Vega, a member of the Divino Niño cooperative in the Suaza area of the Huila region. On his farm, Finca Los Delirios, he grows coffee trees at an altitude of around 1,730 meters above sea level, where the cooler climate and mountainous conditions help the cherries ripen slowly and develop a higher concentration of flavors. The farm covers approximately 3 hectares, and during harvest, up to ten local pickers work here, hand-selecting only perfectly ripe cherries. It was precisely this meticulous work on the farm that helped this Geisha win third place in the prestigious Central Copa de Oro competition. The Geisha variety itself has a fascinating history; it originally comes from the Ethiopian coffee forests and only came into the global spotlight after the success of Panamanian producers in the Best of Panama competition. Today, it is a symbol of the most complex and sought-after specialty coffees in the world.

The washed processing method plays a crucial role in how clean and precise the resulting cup tastes. The coffee cherries first ferment for 24 hours while still in their pulp, then are pulped and ferment for another 48 hours in water from local springs. The beans are then thoroughly washed and dried for 30 days on raised African beds in a parabolic solar greenhouse. This slow and controlled process helps preserve the high purity of flavors, delicate floral notes, and distinctive juicy acidity. As a result, the final cup features a light, velvety body, jasmine aromas, and a fresh citrus finish that leaves a literally sparkling impression. This Geisha is a testament to how precise processing can transform coffee into an exceptionally detailed and elegant taste experience.
