The coffee comes from the Finca La Estrella farm, run by Jairo Iván López and his son César in the Quindío region of Colombia, specifically in the Pijao area. This area is known for its ideal microclimate for growing specialty coffee, with constant fog, high humidity, and slow ripening of the cherries. The Gesha variety, renowned for its elegant flavor and complex aromatic profile, is grown here on volcanic soils at an altitude of 1,700–1,750 meters above sea level. The farm focuses on quality, innovation, and sustainability, which is reflected in every cup of this exceptional coffee.
The processing of this coffee is truly unique. The cherries were fermented for 64 hours without access to oxygen (anaerobic fermentation), which enhanced the fruity notes and acidity. The cherries were then sun-dried, contributing to an intense and clean aromatic profile. This processing method produces a coffee with a clear structure, multi-layered sweetness, and a distinctive liveliness that stands out in both filter and espresso preparations.
