The cherries for this lot are harvested at peak ripeness, selecting those that sink to the bottom when immersed in water. This is how undamaged, perfectly ripe beans are distinguished from less perfect ones. The selected cherries are then fermented underwater for 30 hours, after which the beans are washed and dried under controlled conditions.
