Kofio's seventh birthday is also the seventh anniversary of cooperation with domestic and foreign roasters, coffee education and most importantly - taking care of the best customers.

One of the most popular roasters of recent months will help us celebrate this year's birthday. This is, of course, the Dutch roaster DAK Coffee Roasters. On the occasion of birthday celebrations, we can tap and drink from a cup of fruity Colombia. In this limited package, beans full of champagne, melon and jam notes await you.

The farm Patio Bonito, which is the place of origin of these beans, is located at an altitude of 1560 meters in the municipality of Caldono in the Cauca region. The farm is surrounded by guayacan trees, mano de Oso, avocado, native trees and fruit trees - an area where the greatest wealth of production is represented by 6 hectares of fully shade-grown coffee trees. 19 years ago, farmer Paola Yuliana Trujillo was responsible for the company's coffee quality in the Nariño region. There she also learned to taste coffee, which later motivated her to take over the management of the company and make her own way in the coffee world. At the age of 35, he can already have different varieties on his farm and achieves economic independence.

The coffee is of the Castillo variety, which is characteristic of Colombia. This is a daughter of the Caturra variety. However, this variety is much more resistant to coffee rust and other common diseases. At the same time, it has higher productivity and returns.

Cherries are left after harvest to dry and ferment on concrete floors or raised African beds. In the process, the cherries are constantly turned and dug up, covered from dew and rain so that they do not succumb to mold and rot. After three to six weeks, the cherries are transferred to silos, where they rest for another 30-60 days.

Based on the positive reviews from others, I was looking forward to great coffee, but unfortunately, disappointment...
Notes of fermented, overripe fruit, probably created by uncontrolled fermentation during the natural process
Inconsistent roast - each grain differently dark (lot roasted April 8, '24)
I would classify it as an omni roast, not a filter
Washed treatment would be more suitable
Tested on Espro bloom, Aeropress and espresso (Lelit Bianca), Niche Zero grinder
For comparison, I recommend Columbia by BeBerry, Coffee Collective or Tim Wendelboe
