I waited another two weeks after opening before offering it to myself. And the coffee was much more beautiful. Champagne with just hints.
I guess I opened it too soon at first. I couldn't even tune it at first, nor did the extended coffee. Everything bland, weak, sour. Taste completely off at first. Much better later. Then I guess I was also inconsistent with the hand grinder.
