Groovy is exactly the word that comes to mind when you first taste this coffee. This harvest comes from the Huila region of Colombia, specifically from the Lavaderos area in San Agustín. It is grown by farmer Wilmer Galindez on his Napoles farm at an altitude of 1,800 to 1,950 meters above sea level. Wilmer has managed to transform an abandoned farm into a thriving place and, thanks to his collaboration with the Monkaaba initiative, has entered the world of specialty coffee. Today, he is constantly modernizing processes and improving infrastructure to keep his production in line with the highest standards while preserving the unique character of its place of origin.
The coffee is processed using the washed method, which begins with the freshly harvested cherries being carefully soaked in clean water and then fermented for 24 hours. After the husks are removed, another 54 hours of dry fermentation takes place, followed by slow drying on raised beds for approximately 20 days to preserve the beans' delicacy and complexity. This process gives the coffee exceptional purity, a clear structure, and further enhances the natural character of the Tabi variety.
