Behind this coffee is farmer Julio Madrid from the Risaralda region of Colombia. His farm, Finca Milan, has been growing coffee for several generations and has long focused on the traditional Castillo and Caturra varieties, which are very widespread in Colombia. However, Julio does not just follow tradition – he regularly experiments with processing and is not afraid to try new methods to push the flavor of his coffees even further.
The processing itself is carried out using the washed method with yeast inoculation. This means that nothing is left to chance during fermentation, but carefully selected yeasts are used to give the final cup its specific character. In this case, the coffee has notes of red fruit , mainly raspberries and berries, complemented by the sweetness of peaches and a light, almost creamy hint of banana. Thanks to the washed process, the coffee retains its purity and clear profile, where individual flavors are easily recognizable. The result is a cup that is fresh, balanced, and shows how much properly managed fermentation can influence the overall drinking experience.
