It comes from the El Trapiche farm in the Buesaco area of the Nariño region of Colombia, just a short distance from the border with Ecuador. Here, coffee is grown high in the mountains on small family farms, where manual labor and the experience of the farmers play a major role. Producer Yhon David Gomez has long focused on the clean and consistent expression that is characteristic of this area. The higher altitude and cooler climate slow down the ripening of the cherries, giving them more time to develop sweetness and acidity. As a result, the coffee retains the balanced character typical of Nariño - delicate, sweet, and easily recognizable in the cup.
Thewashed processing gives the resulting profile a clean and beautifully structured base. After harvesting, the cherries are de-pulped, fermented, and then thoroughly washed to bring out their natural flavor. This makes for a very clear cup. The individual tones do not blend together, but gradually develop and maintain a pleasant balance between fruitiness and sweet depth. Medium roasting adds roundness and a velvety body, while the fruity line remains lively. The result is an espresso that is smooth, balanced, and naturally drinkable.
