This innovative project operates as an organic farm, a post-harvest laboratory, and an educational center focused on sustainable cultivation and supporting local farmers. Thanks to crowdfunding, they managed to build a modern wet mill, which serves not only the farm itself but also the entire community. This mill enables farmers to receive fair prices for their cherries and also benefit from export premiums. The two-phase payment model and direct purchase of coffee cherries (instead of pergamino) ensure fairer conditions for farmers and better quality control.

The washed processing of this coffee is a demonstration of precision and innovation. After manual harvesting and careful sorting, the cherries undergo anaerobic fermentation – fermentation without oxygen – in cold water for 48 hours at a stable temperature of 25°C. This process enhances the fruity notes and sweetness of the coffee without compromising its purity. After fermentation, the cherries are dried as a whole on raised beds for 4 to 5 weeks, which results in a deep and complex flavor profile. The outcome is a coffee with extraordinary clarity, vibrant fruitiness, and delicate acidity that will delight any connoisseur of specialty coffee.
