The renowned Dutch roaster DAK is celebrating six years in the world of specialty coffee and is releasing a limited edition birthday coffee to mark the occasion - Confetti Club! This coffee reflects what DAK is all about; it comes from Colombia, where the roaster returns every year to constantly discover new possibilities. As is customary with DAK, the coffee is playful, fun, and stands out from the crowd. The coffee profile hides cheerful notes of bubble gum and cherry cola with the juiciness of raspberries.
The coffee comes from the Finca Anaya farm, located in the Huila region. The farm is headed by farmerSergio Aranda Gómez, who focuses on both maintaining tradition and discovering new processes and innovative processing methods without compromising quality. Sergio also stands for sustainability and a positive impact on society. The lots themselves are located between two mountain ranges, providing the cherries with perfect growing conditions.
The coffee is processed using an anaerobic method with yeast inoculation. In this method, after careful harvesting and inspection, the whole cherries are placed in airtight containers where they are left to ferment without access to oxygen. With this particular method, a precise amount of yeast strain is added to the tanks, giving the farmer greater control over the fermentation process and the development of the flavor profile. This results in a distinctive yet surprisingly clean and controlled profile. It is best enjoyed when allowed to cool slightly, as this brings out the sweetness and fruitiness much more precisely.
