Colombia CHRISTIAN ZUNIGA fromNative by Diego Bermudezis a coffee that feels almost like a glass of natural champagne translated into a pour-over. The very first sip is incredibly lively and juicy—dominated by sweet cherry and ripe blueberries, which create a rich fruity base. Gradually, a light, sparkling acidity reminiscent of champagne emerges, making the cup elegant, fresh, and unexpectedly light despite its pronounced sweetness. Chiroso showcases its typical aromatic clarity and floral elegance, while the natural processing adds depth and a silky texture. The result is a complex, luxurious, yet perfectly clean cup that feels almost festive.
The coffee comes from Colombia, specifically the Bolívarregion, and is produced by Cristian Zúñiga, who belongs to a new generation of Colombian farmers focused on precise and modern work with specialty coffee. Cristian specializes in the Chiroso variety, which is prized for its distinctive aroma, elegant structure, and ability to create exceptionally complex cups. His lots are produced in small quantities, and each has a clear sensory goal—to highlight the fruitiness and character of the variety without losing clarity or balance. That is precisely why this coffee made it into the Hyper Limited series, which showcases Native Roastery’s most distinctive and rarest micro-lots.
This Colombian coffee is processed using the natural method. The cherries are harvested only at optimal ripeness and then dried whole, including the pulp, to enhance the sweetness and intensity of the fruity notes. The entire drying process is very carefully controlled so that the coffee retains its purity and elegance without heavy or overripe fermentation notes. As a result, the character of the variety remains beautifully distinct—bright, fruity, and structured, yet deep and sweet. The result is a natural Colombian coffee that feels juicy, lively , and incredibly precise.
