Square Mile’sColombia Calamar is an elegant yet playful Pink Bourbon that combines juiciness with a delicate sweetness. In the cup, raspberry, hibiscus, and honey come together to create a fruity, floral, and beautifully balanced profile. The coffee is smooth, with pleasant acidity and a long, sweet aftertaste. It’s a typical light filter coffee that delights you from the first sip, yet remains easy to drink and approachable even for everyday enjoyment.
Behind this lot is producer Gildardo Lopez Hoyos, along with his sons Luis and Ivan, who farm at El Calamar in the mountainous Paicol area on the western edge of the Huila region. The family has long collaborated with importer Osito and has built a strong reputation in recent years thanks to the quality of their coffees, particularly the Pink Bourbon variety. Their work regularly appears among the award-winning lots in local competitions, and the farm is gradually expanding to include new varieties such as Geisha. Attention to detail, experience, and a family-oriented approach are clearly reflected in every cup.
Processing is done using the washed method with extended fermentation, which enhances sweetness and complexity. Carefully selected, fully ripe cherries ferment for approximately 30 hours while still whole, after which they are hulled, followed by another phase of fermentation lasting about 48 hours. After washing, the coffee is dried on raised beds for 20 to 25 days, allowing for slow and even drying. This approach results in a cup that is silky smooth, sweet, and beautifully balanced, with a bright fruity profile and delicate floral elegance.
