Behind this coffee is producer Brayan Smith from the Las Brisas region, where coffee trees grow at an altitude of around 1,900 meters. The high altitude, cooler climate, and meticulous work on the farm give rise to beans with distinctive sweetness and complexity. The Sidra variety, a relative newcomer to the coffee scene, is a cross between Red Bourbon and Typica, combining a full, velvety body with juicy acidity and a rich aromatic spectrum. It is often referred to as a rising star that may one day rival even the legendary Gesha. No wonder—its profile evokes sweet tropical fruit and honeyed smoothness while retaining clarity and elegance.
The dry (natural) processinggives this Sidra its distinctive fruitiness and depth. After being hand-picked, the whole cherries are sun-dried; the pulp remains on the fruit throughout the process, allowing for gradual fermentation and the transfer of sweet, fruity notes into the flavor.
