There are coffees you taste and then forget. And then there’s the Colombia BRAYAN SMITH – Sidra from the Viennese roastery KOUN Coffee, which will captivate you from the very first sip. Juicy strawberries, fresh pineapple, and a delicate cocoa base come together inan unexpectedlyvibrant profile that surprises with its clarity, even with natural processing. This coffee is open, energetic, and beautifully straightforward—no chaos, just joy in every sip. If you feel like nothing can surprise you anymore, this is exactly the moment to reconsider.

Behind this coffee is producer Brayan Smith from the Las Brisas region, where coffee trees grow at an altitude of around 1,900 meters. The high altitude, cooler climate, and meticulous work on the farm give rise to beans with distinctive sweetness and complexity. The Sidra variety, a relative newcomer to the coffee scene, is a cross between Red Bourbon and Typica, combining a full, velvety body with juicy acidity and a rich aromatic spectrum. It is often referred to as a rising star that may one day rival even the legendary Gesha. No wonder—its profile evokes sweet tropical fruit and honeyed smoothness while retaining clarity and elegance.

The dry (natural) processinggives this Sidra its distinctive fruitiness and depth. After being hand-picked, the whole cherries are sun-dried; the pulp remains on the fruit throughout the process, allowing for gradual fermentation and the transfer of sweet, fruity notes into the flavor. The result is a fuller body, intense aromas, and a juicy, sweet character that, in this case, loses none of its purity. On the contrary, it is precisely the combination of the Sidra variety and precise natural processing that creates a cup that is both wild and perfectly balanced.
