The coffee comes from the Colombian region of Gaitania in Tolima, which is known not only for its coffee tradition but also for its painful history of armed conflict. In 2019, the Black Condor project was launched here, founded by the export company Forest Coffee, established by the Bayter family from EL Vergel, in collaboration with local farmer Emmanuel. The aim of this project is to support farmers in the conflict-affected area. They help them with cultivation and processing, and also supervise the quality of the coffee grown. The project regularly organizes workshops to help with the fermentation and drying process, as well as cuppings of their own coffee. More than 15 villages in the Gaitania region are already involved in the project. This washed lot of coffee is a beautiful example of what the Black Condor project has helped farmers in Gaitania achieve.
During processing, the beans are first hulled, leaving the pulp on them for another 24 hours, which helps develop sweet and complex flavors. This is followed by a sun-drying process lasting 15 to 25 days. Finally, there is only the stabilization process, which locks in the flavors before proceeding to the grinding stage.
